「1. Mustard Greens: Restore Memory Leaves

Mustard is the stem and leaves of mustard, a cruciferous plant, which is abundant in winter. It is rich in carotene, vitamin B complex, vitamin C and iron. Its specific effect is refreshing. Mustard greens contain a large amount of ascorbic acid which is a highly active reducing substance. It participates in the body’s important redox process. Eggs are one of the healthiest foods. People are curious especially whether the yolk will increase cholesterol when consumed. 70% to 80% of the cholesterol production in the human body is self-synthesized. When eating food with high cholesterol, the self-synthesis will be reduced. Under a healthy condition, excess cholesterol will be metabolized. The egg yolk is not a main factor that affects cholesterol when consumed. A whole egg contains 700mg of lecithin which is equivalent to the lecithin content of two rice bowls of soybeans. The active ingredient phospholipid choline can reach 25% of the human body’s daily requirement. Lecithin is a blood scavenger which can promote the metabolism of cholesterol in the blood and is also an important component of cell membranes. After lecithin enters the human body, choline will be produced after digestion and absorption. It is the raw material for the synthesis of the neurotransmitter acetylcholine. Acetylcholine Alkali can improve memory and prevent dementia in old age.

「3. Apple x Pectin = Memory Pectin」

Refer to Dae Jang Geum’s Korean TV series, she prepared several apples for the emperor and placed them in his bedroom to help the emperor relax and fall asleep. Apples really have a curative effect. Long and short-term memory is managed by the brain-derived neuron factor (BDNF) in the brain. Researchers also found that Butyrate will be converted from apple pectin by intestinal bacteria which can inhibit HDAC to enhance our memory2.
